It's cauliflower pizza time!


…Yes. You heard correctly, cauliflower pizza! Who could think such a thing could taste so good? Well….I am going to show you. BUT…..FIRST…here are some things to take into consideration:


1. If you make this enough…you will have killer biceps. This dish requires wringing out all the moisture from the cauliflower…and this veggie retains a lot!

2. DO NOT…I repeat…DO NOT think that this is going to taste exactly like pizza! While this is a verrrrryyyyyyyy…..verrrryyyyy YUMMY substitute for pizza (for my hardcore pizza enthusiasts), this will not TASTE exactly like pizza. We aren’t using bread for this, so the consistency will be different. BUT….this is a great way to enjoy some pizza guilt-free.

3. This recipe yields about a 6” pizza (a personal pizza). After your first attempt, feel free to double or triple the recipe for a family size.


Now, with those things in mind…lets get started.


Ingredients:

1 head of cauliflower

1 large egg

Parmesan cheese

Mozzarella cheese

Pizza Sauce


Seasonings:

Italian seasoning

Salt

Pepper


First, you’re going to break off the cauliflower into florets…(fancy word J) and put them all into a food processor and “rice” the cauliflower. When you “rice” the cauliflower, you are simply pulsing the cauliflower into fine pieces. Once you have riced the cauliflower, transfer it into a microwave-safe bowl and heat up the riced cauliflower for 6 minutes.

After 6 minutes, let the cauliflower cool down for about ten minutes (or when warm up enough to handle). Once it has cooled down, transfer to a cloth napkin and wring out all the water from the cauliflower. Get ready to work up a sweat and get some serious arm muscles! Pre-heat your oven to 450 degrees.


Once you have taken all the moisture out of the cauliflower:

Transfer the “dough” to a bowl and ADD the eggs, Italian seasoning, salt, and pepper.


ADD half a cup of Parmesan cheese and mix all the ingredients by hand.


Lay out a piece of parchment paper on a cookie sheet, and spread out your dough in the shape of a pizza.



Once your oven has pre-heated, bake the cauliflower pizza crust for 30 minutes.


After 30 minutes, ADD your toppings. I like pizza sauce, and just plain mozzarella, but you can add whatever you like! Feel free to get creative. I am going to make half of it with pepperoni one day!


Put the pizza back in the oven for another 5-10 minutes, or until your ingredients are melted.

Take out your pizza and enjoy! I would let it cool for 5-10 min before cutting.
